Our road trip to Pahalgam on Day 2 of our Kashmir Tour includes a vital and fragrant stop in Pampore, the “Saffron Capital of India”.

In this episode, we’re not just driving through; we’re stopping at a local farm shop to get a complete education on what makes Kashmiri saffron the most prized in the world [00:09, 00:15]. A local expert and farmer gives us a full demonstration, from the flower’s anatomy to the foolproof tests for purity. Then, we get to taste it in action with a freshly prepared, aromatic cup of traditional Kashmiri Kahwa.

A Taste of Kashmir: All About Saffron & Kahwa

Pampore: The Saffron Capital

Pampore, located just 11-15km from Srinagar, is globally renowned for its saffron. The unique soil and climate here are perfect for the Crocus sativus flower, and the region’s ‘Mogra’ saffron is protected by a Geographical Indication (GI) tag for its superior quality. As the farmer in the video explains, this saffron is 100% organic and grown by local ‘zamiindars’ (farmers) [00:40, 00:45].

Best Time to Visit

While we were visiting, the fields were not in bloom. The expert in the video confirms the short harvest season is from mid-October to the end of November [00:34]. If you visit during this time, you can see the fields covered in a breathtaking carpet of purple flowers.

How to Identify Pure Saffron

It’s easy to be sold fakes. Here’s what we learned from the expert [01:28]:

  • Look at the Strands: Real saffron strands (stigmas) are trumpet-shaped at one end and thin at the other [01:49]. They are a deep, uniform red.
  • The Water Test: Place a few strands in cool water. Pure saffron will slowly release a deep golden-yellow color [02:21, 02:43]. The strands themselves will remain red and will not dissolve [02:38, 02:23]. Fake saffron often bleeds red dye immediately.
  • The Taste & Smell Test: Real saffron has a strong, floral, and sweet aroma [01:34], but it should not taste sweet. The expert has us taste it, and it’s bitter (kadva), which proves its purity [02:04].

The Magic of Kahwa

The video ends with a taste of authentic Kashmiri Kahwa. This is a traditional warming beverage, more than just tea; it’s a symbol of hospitality. It’s made from Kashmiri green tea leaves, whole spices like cardamom and cinnamon, and, of course, a few strands of pure saffron. It’s then garnished with slivered almonds or walnuts, creating a fragrant, rejuvenating, and healthy drink.
